[Gajanan] Matta Rice
ABOUT THIS ITEM:
Matta
rice origin was Palakkadan fields in Kerala state of India, matta rice has been
historically popular due to its rich and unique taste, the choice of royal
families of the Chera/Chola kingdoms was considered a royal food.
Matta
rice is grown in Kerala and Karnataka in Southern India, cultivated in the
dense black cotton or regar soil, rich in lime, heavy soil, containing 60-80%
of clay and silt, the humid weather, easterly winds and the rivers that flow
from the Western Ghats give uniqueness contains a lot of clay and silt, because
of these qualities, paddy fields can retain more water. The rice has a distinct
earthly flavour because of the type of soil in which it is cultivated.
The grain is yellowish pink (from being parboiled) with a reddish outer layer. Rose matta rice maintains its pink hue as well as its flour on cooking. Like all brown or parboiled rice, red matta has a long cooking time and requires extra water.
